Macaroni and Cheese has been my comfort food since childhood and if I miss anything most on my Keto diet, it has to be a warm, cheesy bowl of dear old mac ‘n cheese. But with restriction on carbs and grains (read pasta), it meant that I would have to give it up! However, whenever there’s a non-Keto meal that needs to be included into a Keto meal plan, I rush for a Cauliflower version. And, as it turns out the results are incredible. Cauliflower Mac and Cheese is just as delicious as the original version without any carbs but oodles of taste. In fact, the cauli gives it a different but just as good flavor.

After spending considerable time, I was able to find these three extremely incredible and easy to prepare Mac ‘n Cheese recipes. So, if you too are not ready to give up on your favorite comfort food then definitely try these three amazing recipes.

1. Crispy Cauliflower Mac ‘n Cheese

While mac and cheese is usually prepared by baking it, this recipe takes an interesting take to first pan fry the cauli. Why? To keep it crunchy and well, fun. To further add to the crunchiness they have added pork rinds which make for a great combination and you never miss breadcrumbs.

2. Cauliflower Mac ‘N Cheese with English Cheddar and Bacon

If you don’t prefer the crunchier version, then try this more orthodox version with English cheddar and bacon. The taste and texture of this version more close to the classic mac ‘n cheese. The baked cauli with cheese almost makes you forget that you’re not eating pasta but a vegetable.

3. Lemony Mascarpone Cauliflower Mac ‘n Cheese

The creamy mascarpone takes the cauli mac ‘n cheese to a whole new level. The lemon adds a bit of zest and asparagus gives it a crunchy feeling. This is your comfort food in a much more sophisticated version.
